1 can (8 oz.) Geisha® Water Chestnuts, sliced, drained
1/2 cup water
1 1/2 cups baby carrots
1 1/2 Tsp.sugar or honey
1/4 Tsp.salt
1 1/2 cups baby corn, husked
1 Tbsp. dijon style mustard
1 Tsp. chopped parsley
2 1/2 Tbsp. olive oil
Salt and pepper
Preparation
Bring water to a boil. Add carrots along with sweetener and salt. Cover. Cook for 5-7 minutes. Add baby corn, Water Chestnuts and parsley, cook an additional 5 minutes. Mix mustard, sugar and oil. Salt and pepper to taste.
