Cactus Salad
(Makes 4 Servings)

Ingredients

  • 1 can (8 oz.) Geisha®Water Chestnuts, sliced, drained, shredded
  • 1 can (8 oz.) Geisha®Bean Sprouts, drained
  • 1 lb of fresh cleaned and diced cactus
  • 1 cup of chopped bell pepper
  • 1/2 cup chopped onion
  • Salt and pepper to taste
  • 2 1/2 Tbsp. sugar
  • 1 1/2 Tbsp. lime juice

Preparation

  1. Mix all ingredients and salt and pepper to taste, marinate overnight in refrigerator to blend flavors.
